The Last Night Vacation Meal

How to turn leftover vacation groceries into a last night feast


This recipe comes from Ellen's story about her annual girls' trip grocery list, as one of the last meals they prepare together.

We have a new tradition of staying in on the last night and doing a Last Night Fridge Clean-out, which entails trying to eat as much of the food in the fridge as possible. Here's what that typically looks like for us:


  • Take all the leftover veggies and roast them on a sheet pan with olive oil, salt, and pepper to make an antipasto platter.

  • Make a tapenade from leftover hummus, spread it on toasted bread, and top with sliced cheese and tomatoes if you like.

  • Stick that frozen pizza in the oven and serve it with a simple salad of lettuce, tomato, cucumber and onion.

  • If you still have pasta, make a pasta primavera with vegetables, olive oil, Italian seasoning and tomato.


You'll be surprised how quickly you can fill up on being creative and have a nice and restful night in before your travels home.


Ingredients

  • Leftover vegetables (any combination)

  • Olive oil

  • Salt and pepper

  • Leftover hummus

  • Bread (for toasting)

  • Sliced cheese

  • Tomatoes

  • Frozen pizza

  • Lettuce

  • Cucumber

  • Onion

  • Leftover pasta (optional)

  • Italian seasoning


Directions

  1. Preheat oven to 400 degrees. Toss all leftover veggies on a sheet pan with olive oil, salt and pepper. Roast until tender and slightly caramelized, about 20-25 minutes. Arrange on a platter for an antipasto spread.

  2. Make a tapenade from leftover hummus and spread it on toasted bread. Top with sliced cheese and tomatoes if you like.

  3. Bake the frozen pizza according to package directions.

  4. Make a simple salad with lettuce, tomato, cucumber and onion.

  5. If you still have pasta, make a pasta primavera by tossing it with roasted vegetables, olive oil, Italian seasoning and fresh tomato.


    Serve everything family-style and enjoy the last night together with friends!
