An Easy Breakfast Burrito Recipe for Every Girls' Trip


This recipe comes from Ellen's annual girls' trips story, where breakfast burritos have become the group tradition. Whether you're looking for an easy breakfast while traveling or meal-prepping for the week, this make-ahead breakfast burrito recipe works anywhere, anytime.

This breakfast burrito recipe that's fueled years of trips is easy to scale, endlessly customizable, and perfect for feeding a hungry crew.


Ingredients

  • Eggs (scrambled)

  • Flour tortillas

  • Shredded cheese

  • Sliced jalapeños

  • Onion (caramelized preferred, but any cooked onion works)

  • Sliced avocado

  • Breakfast meat (cooked bacon or sausage, tofu, or meatless crumbles)

  • Salsa, hot sauce, and sour cream for serving


Directions


  1. Preheat oven to 350°F.

  2. Warm tortillas on a gas burner (about 20 seconds per side) or in a dry pan if using electric burners.

  3. Scramble the eggs and set aside.

  4. Fill each tortilla with eggs, cheese, jalapeños, onion, avocado, and breakfast meat.

  5. Fold in the sides and roll tightly to form burritos.

  6. Line burritos in a baking pan and cover with foil.

  7. Bake for 15 minutes covered, then remove foil and bake an additional 5-10 minutes until the outside is slightly crispy and burritos hold together.

  8. Add your chosen toppings of salsa, hot sauce, or sour cream.


    Save the foil for wrapping leftovers—they reheat beautifully in the oven when kept wrapped! Or throw one in your bag for a day trip. They are easy to take along on any adventure.
